  • 1 cup of icing sugar

To make it, beat 4 eggs with 1 cup of sugar until it doubles in volume and turns a pale yellow color. Separately sift 2 cups of flour, 1 ½ tablespoon of baking powder. Grate the peel of 1 lemon. Slowly beat the ripe avocado pulp with the lemon juice and eggs. Stir in the dried and grated lemon peel until perfectly blended. Pour into a previously greased mould. Bake at 180 °C for 40 minutes. After this time, take it out and let it cool down. You can eat it like this or add a glaze. Just mix 1 cup of icing sugar, 1 ½ tablespoon of lemon juice and the grated juice.
